Watauga County sits at the top of the NC High Country — literally. At elevations pushing 4,000 feet and above, the streams here run cold enough to hold trout well into summer. The Watauga River anchors it all as the county's marquee Delayed Harvest fishery, flowing through Boone and drawing anglers from across the region. Add 14 hatchery-supported streams scattered across the county — from Beech Creek to Stony Fork to the South Fork New River — and you're looking at the highest density of stocked trout water in the NC mountains. Here's everything you need to fish Watauga County in 2026.
Catch & Release Best Practices
- Use barbless hooks — or pinch down your barbs before you fish
- Wet your hands before handling fish; dry skin strips protective slime
- Keep fish in the water as much as possible — no flopping on the bank
- Use rubber-mesh nets; they're far gentler on fins, gills, and eyes
- Hold the fish facing the current until it swims out of your hands on its own
- Quick photo, quick release — the fish thanks you, so does the next angler
🔵 Delayed Harvest Streams

Watauga River — Valle Crucis Section
SR 1114 Bridge to NC 194 Bridge at Valle Crucis. A 1.2-mile DH section flowing through the scenic Valle Crucis area. Classic pool-riffle-run sequences with good public access. The Valle Crucis section sits upstream of the Boone section and tends to see slightly lower pressure — a good option if the main Boone access points are crowded.

Watauga River — High Country Character
The Watauga River's high elevation keeps water temperatures cold well into summer — a significant advantage over lower-elevation fisheries. After a fresh stocking, egg patterns and San Juan Worms dominate near the bottom. Give it a week and the fish wise up quickly. Switch to smaller nymphs, soft hackles, and caddis dries. The river's proximity to Boone means fishing pressure is consistent, so early mornings and weekday sessions fish better than weekend afternoons.

Lake Coffey — Delayed Harvest
Entire lake — 2 acres. A small reservoir near Boone that operates under Delayed Harvest regulations — one of the few stillwater DH fisheries in the NC mountains. Great option for anglers who prefer lakes over moving water, beginners learning to fly fish, or families looking for an accessible outing. Indicator nymphing and slow-stripped streamers both produce well in stillwater DH conditions.

Elk Creek
SR 1510 Bridge at Triplett to the Wilkes County line. At 10 miles, Elk Creek is the longest hatchery-supported stream in Watauga County. It drains a large watershed in western Watauga County and offers more room to cast and better holding water than the smaller tributaries. The additional volume means fish spread out more after stocking, but also that good pools hold fish longer into the season.
